Miele di Castagno (Chestnut Honey) is pure honey from our Tuscany region. Dark and spicy, with touches of smoke and leather, chestnut honey is complex, mysterious, and nuanced.
No two are alike as many factors affect the color and odor, including the type of chestnut, the microclimate in which it grows, type of bees and even weather conditions (in a dry summer honey saturates). The darker the honey, the stronger the smell – this general rule is subject to chestnut honey, but its flavor is even more strong than in other types of honey.

Chestnut honey, characterized by a strong honey flavor can be used in so
many different ways. Try it on baked cookies, cakes and tarts or use it to
make a deeply flavored ice cream (it pairs perfectly with hazelnut gelato).
You can use it for marinades or for glazing roasts, or you can have a
typical Tuscany appetizer drizzling it over a wedge of Pecorino Toscano
with some fresh pears. Another interesting way to enjoy our Chestnut
Honey is the one to spread it on a chestnut flour crepe stuffed with ricotta
or have it in a special sandwich composed by Gorgonzola, slathered with
chestnut honey and some peppery baby arugula.
But if you’re a newbie, start with something simple: For the very best
breakfast ever, spread a thick slice of toasted semolina bread with plenty
of sweet butter and a generous slick of chestnut honey. There may be no
going back after that.
